On The Hoof is the newest addition to The Red Bus Company. Custom built by Rory using a Second World War Army water tank, our wood fired smoker is the first of its kind in Ireland. All of the food is cooked using County Armagh apple wood adding a beautiful sweet, smokey flavour to the food cooked inside. Low and Slow is the style of cooking, with our cook times varying from two to fourteen hours depending on the menu.
ON THE HOOF, How it works…..
All meats cooked low n slow over seasoned native timbers such as ash and applewood. They make our own rubs and prepare Irish reared beef from shorthorn cattle that have Been aged for up to 28days.
The Meats include: Beef Brisket – Irish Bacon Loin – Marinated chicken skewers – BBQ pork ribs – BBQ Beef ribs
Sides include: Napa Salad or Coleslaw – Homemade BBQ burnt ends Beans – Cheesy Corn bread – Sweet potato fries or chips
The trimmings: Homemade BBQ sauce – cheesy leek sauce – cucumber pickle – sesame kimchi – pickled watermelon rind – iceberg and radish salad.
Daily specials could include: smoked slow roasted shoulder of lamb with wild garlic served with a mint and Chilli Drizzle, crushed new potatoes – slow roasted goat or venison with braised seasonal vegetables – Beef stovies and homemade gravy, great cold day lunch.
Fiona and Rory are also the proud owners of a big red London bus – a 1965 Routemaster to be precise. She’s called Ruby and she’s been done up to the nines ready for events. They were a fantastic addition to the Laya Spectacular in Merrion Square last year and return once again this July.
