Burger Republic8Burger Republic can be found at many of our markets serving up the best burgers in the country (if you ask us)!  Despite his busy schedule, we managed to grab Paul Catterson to find out how he came to be with Irish Village Markets.

Tell us about your stall, how did it come to be? After spending a lot of years working in restaurant kitchens in London and other cities I decided I needed a change from that manic environment.  I wanted to spend more time with my family and do something for myself.  We bought an old American Airstream trailer with the idea of doing the festival circuit doing gourmet burgers and then realised I needed to do something for the remaining 9 months of the year!!  After a bit of research we found Irish Village Markets and thankfully its gone from strength to strength.

Have you always had a passion for food? For me it was really from secondary school on

wards.  I got a job in a hotel kitchen at 16, went to college and at the age of 21 moved to London for a year to get experience and stayed nearly 9!  I love the buzz of kitchens, the chance to use great ingredients and creating dishes. I’ve been very lucky to work in some fantastic kitchens with some great chefs and experience the blood, sweat, tears and laughter that goes with it.

When you’re not feeding people, what do you like to do? I love to go home, I’ve spent a lot of my live working crazy hours and now its great to get back to the house and have a normal family life. I’ve two boys Daniel 15 and Matthew 11 and married to Elaine (my better half!)

Where do I start!  Working behind the swinging doors in restaurant kitchens you get the chance to try every ingredient and concoction known to man, I’ve had the chance to try freshly roasted duck in the Duck kitchen in the Mandarin in Hong Kong,  freshly made truffle pasta with my mate Andrew in 15 in London,  pit roasted pork on the side of a volcano in Chile and Bacon sandwiches at 3 in the morning at Billingsgate Fish Market in London!  However, nothing beats a Sunday morning fry and fresh coffee at home!

Other than your own, what stall would you recommend people visit at Irish Village Markets? Impossible to pick one stall as they are all great, the boys and girls all work hard on their stalls and the food is excellent.  Dave’s “Say Fish”, Kerala Curry, Freds Roast Chicken, Kanum, Grub Hub, Paella Guys and all those I haven’t mentioned.  I’d recommend to try them all and then just keep coming back for a speciality burger!
